The Macallan Fine Oak is ‘Triple Cask Matured’ in a unique, complex combination of exceptional oak casks.
Spanish oak sherry seasoned casks begin life in the forests of northern Spain. Here, the rich timber is sawn into staves and left to dry in the open air. The staves then travel south, where, after further air drying. They are fashioned into casks and toasted over an open fire in the cooperages of Jerez. Filled with dry Oloroso Sherry, the casks are left to season for up to two years before being emptied and shipped to The Macallan Distillery, Speyside, Scotland. Fine Oak also uses a proportion of American oak casks, some of these are very rare Sherry seasoned casks, others are Bourbon seasoned.
At Thee Macallan distillery, the casks are filled with ‘new make’ spirit and gently slumber over 30 years over which time, it slowly matures into this extraordinary smooth, delicate yet complex Single Malt.
Colour: Pale gold.
Nose: Rich, exotic, heady and aromatic; reminiscent of an orange grove.
Palate: Rich Macadamia nut and vanilla with hints of sandalwood and black cherry.
Finish: Soft, silky and extremely elegant.
