The Dalmore has been at the forefront of whisky maturation for over 175 years. Generations of knowledge and artistry have honed our ability and desire to push the boundaries of what is possible, in the world of single malt.
Our exceptional new make spirit is forged in eight hand-beaten copper stills. The unique combination of small and large stills add layers of character, complexity and depth of flavour, creating the perfect canvas for The Dalmore’s Master Distiller, Richard Paterson, to create visionary expressions using hand-selected, rare and exclusive casks from around the world.
THE DALMORE QUINTESSENCE
‘Quintessence’ means “perfect embodiment” and this limited edition expression of The Dalmore truly lives up to that. It is a unique single malt whisky which showcases the technical virtuosity and creative vision which sets The Dalmore apart.
Paterson’s unrivaled passion to push the boundaries of whisky creation led to the sun-drenched vineyards of California where he sought to combine his love of fine wine and exceptional whisky.
Following a painstaking search, five different types of red wine cask, signifying the five decades of Richard’s career, were hand-selected and sent to The Dalmore distillery, deep in the Highlands of Scotland.
MATURATION AND TASTING NOTES
Following an initial maturation in American white oak ex-bourbon barrels, the spirit was split across the five cask types which had individually held; Zinfandel, Pinot Noir, Syrah, Merlot and Cabernet Sauvignon.
These casks were then carefully placed deep within Warehouse No. 2 to ensure the perfect environment for the wine casks to impart their distinct characteristics into the whisky.
After an unprecedented five years finessing, the five casks were brought back together to create a unique and rewarding masterpiece – The Dalmore Quintessence. The only single malt whisky in the world with a five Californian red wine cask finish, and the perfect embodiment of a true master’s art.
AROMA: Black Forest fruits, marmalade and honeycomb.
PALATE: Tropical fruits, ginger and sun dried raisins.
FINISH: Orange, fresh baked banana.
